Preheat oven to 350. Prepare your cookie sheet by greasing with additional coconut oil or lining with some parchment paper.
In a medium bowl, whisk almond flour, baking powder, and salt together. In a separate bowl, combine the melted coconut oil, maple syrup, and vanilla extract.
Add wet ingredients to dry. Use a rubber spatula to stir gently until fully incorporated into dry ingredients. Your dough should be somewhat dry.
Roll out cookies. Scoop ~1.5 Tbsp of dough and roll between hands to form a ball. Use your thumb to create an indent in the middle of the ball. Repeat with all 10-12 cookies. If desired, sprinkle additional salt over each cookie (I always do!)
Bake for 14-16 minutes or until your cookies are golden-brown. Remove from oven and allow to cool. Once cookies are cooled, scoop ~1 tsp of jam into the indentation of your cookie and enjoy!
