2headsbroccoli(about 3 cups) cut into bite-sized florets
2Tbspolive oil
2Tbspbalsamic vinegar
1tspground cumin
1tspchili powder
½tspsea salt(plus more to taste)
Instructions
Preheat oven to 400°F. Toss broccoli with all other ingredients in a large bowl, then spread on a foil or parchment lined baking sheet.
Roast 40 minutes, tossing halfway through, or until broccoli is crisp and cooked through. Adjust with additional salt to taste, serve, and enjoy.
Notes
Meal prep storage: store in an airtight container for 3-4 days. Reheat in the oven at 350 for 10 minutes or in the microwave in 1 minute increments until warm.
