Balsamic Spiced Roasted Broccoli

Ingredients

  • 2 heads broccoli (about 3 cups) cut into bite-sized florets
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp sea salt (plus more to taste)

Instructions

  • Preheat oven to 400°F. Toss broccoli with all other ingredients in a large bowl, then spread on a foil or parchment lined baking sheet.
  • Roast 40 minutes, tossing halfway through, or until broccoli is crisp and cooked through. Adjust with additional salt to taste, serve, and enjoy.

Notes

Meal prep storage: store in an airtight container for 3-4 days. Reheat in the oven at 350 for 10 minutes or in the microwave in 1 minute increments until warm.
