I'm a warm weather lover through and through, but there's something about autumn that is so special. I'm sure it has a lot to do with all of the nostalgic memories tied to the season--as a perennial nerd, back to school time was always extremely exciting and joyful when I was in elementary and middle school. The smell of a Staples floods me with the feeling of a fresh start and organizational giddy to this very day. Let's just say that I had some pretty bomb-ass binders back in the mid-late 90s.
And of course I also have VERY strong sense memory tied to the now classic (and basic) scent of a good ol' pumpkin spice latte. I vastly reduced my coffee and added sweetener intake back when I was first diagnosed with PCOS so grabbing a PSL from the Starbies around the corner isn't on the table for me at the moment. But this year, I decided I wouldn't deny myself the pleasure of sipping on a warm pumpkin-inspired bevvy--autumn lover's gotta autumn, ya know?
So I set out to create a caffeine-free, low-sugar option and must say that I'm beyond pleased with the result. This latte is creamy, slightly sweet, and most importantly, perfectly pumpkin-y. It also has the added benefit of being anti-inflammatory thanks to the addition of turmeric. And this babe is EASY--you'll have it whipped up faster than it would take you to get through the line at your local Seattle-based coffee conglomerate. Turmeric Pumpkin Spice Latte
Ingredients
- 1 cup full fat coconut milk
- 1 cup almond milk
- 1 & ½ tsp turmeric powder
- 1 tsp pumpkin spice (I like the Simply Organic brand)
- ½ tsp vanilla extract
- Dash black pepper
- 1 tsp maple syrup
Instructions
- Add all ingredients to a small sauce pan. Whisk to combine (I like to use a little hand held electric froth-er for this step, but it can be done with a hand whisk as well). Heat until warmed to drinking temperature (about 5 minutes).
- Serve immediately with a dash of additional pumpkin spice for garnish (optional).
