I'm a firm believer in listening to your body, especially when it comes to food. This smoothie is a perfect case in point. As we move away from summer and toward the icy, dark depths of winter (OK maybe I'm being a little dramatic, but brrr, winter in NYC is cold!), I've been craving food that's a little more warming in the morning. Oats sometimes make me bloat, and I'm not eating eggs these days, so I set out to concoct a smoothie that would feel grounding, taste delicious, and give me the cozy, warming feels I'm craving at this time of year.
Warming smoothie you say?! Yes, I do say! While this smoothie isn't actually served warm, its spice blend, autumnal flavors, and lack of frozen fruit make it a wonderful transitional breakfast. And dare I say, I think its flavor profile very much resembles a pumpkin pie. Some variation of this blender babe has been on rotation for breakfast for the past month!
Another thing I love about it--it's made completely with whole foods (i.e. no funky protein powders), but it still packs punch due to the protein and fat in the hemp seeds and nut butter! I have some trouble handling protein powder, but this smoothie digests like a dream, and I'm not worried about any weird fillers that might be in a packaged powder. Pumpkin Pie Smoothie
Ingredients
- 1 & ½ cup steamed cauliflower*
- ¼ large honey crisp or other apple** (~½cup diced)
- 2 Tbsp almond butter
- ½ tsp pumpkin spice (I like Simply Organics brand)
- 2 Tbsp hemp seeds or powder (I like Navitas Organics brand)
- 1 cup almond milk
- ¼ cup unsweetened pumpkin purée
Instructions
- Add all ingredients to a high-speed blender and blend on high for at least 1 minute or until creamy! Pour and enjoy!
