Paleo Vegan Raspberry Thumbprint Cookies

Thumbprint Cookies

This recipe needs little preamble, so let's get right down to it. Enjoy these paleo, vegan, absolutely delicious and EASY thumbprint cookies!

Paleo Vegan Raspberry Thumbprint Cookies

These paleo vegan thumbprint cookies are also delicious, gluten free and so easy. They're the perfect cookie for your next gathering!

Ingredients

  • 2 cups almond flour
  • ¼ tsp baking powder
  • ½ tsp salt (plus more for sprinkling)
  • ¼ cup melted refined coconut oil
  • 3 Tbsp maple syrup
  • 1 tsp vanilla extract
  • Raspberry jam of choice (I like Trader Joes organic)

Instructions

  • Preheat oven to 350. Prepare your cookie sheet by greasing with additional coconut oil or lining with some parchment paper.
  • In a medium bowl, whisk almond flour, baking powder, and salt together. In a separate bowl, combine the melted coconut oil, maple syrup, and vanilla extract.
  • Add wet ingredients to dry. Use a rubber spatula to stir gently until fully incorporated into dry ingredients. Your dough should be somewhat dry.
  • Roll out cookies. Scoop ~1.5 Tbsp of dough and roll between hands to form a ball. Use your thumb to create an indent in the middle of the ball. Repeat with all 10-12 cookies. If desired, sprinkle additional salt over each cookie (I always do!)
  • Bake for 14-16 minutes or until your cookies are golden-brown. Remove from oven and allow to cool. Once cookies are cooled, scoop ~1 tsp of jam into the indentation of your cookie and enjoy!
