Paleo Vegan Raspberry Thumbprint Cookies
These paleo vegan thumbprint cookies are also delicious, gluten free and so easy. They're the perfect cookie for your next gathering!
Ingredients
- 2 cups almond flour
- ¼ tsp baking powder
- ½ tsp salt (plus more for sprinkling)
- ¼ cup melted refined coconut oil
- 3 Tbsp maple syrup
- 1 tsp vanilla extract
- Raspberry jam of choice (I like Trader Joes organic)
Instructions
- Preheat oven to 350. Prepare your cookie sheet by greasing with additional coconut oil or lining with some parchment paper.
- In a medium bowl, whisk almond flour, baking powder, and salt together. In a separate bowl, combine the melted coconut oil, maple syrup, and vanilla extract.
- Add wet ingredients to dry. Use a rubber spatula to stir gently until fully incorporated into dry ingredients. Your dough should be somewhat dry.
- Roll out cookies. Scoop ~1.5 Tbsp of dough and roll between hands to form a ball. Use your thumb to create an indent in the middle of the ball. Repeat with all 10-12 cookies. If desired, sprinkle additional salt over each cookie (I always do!)
- Bake for 14-16 minutes or until your cookies are golden-brown. Remove from oven and allow to cool. Once cookies are cooled, scoop ~1 tsp of jam into the indentation of your cookie and enjoy!
