This sweet potato purée is deceptively simple--I've actually had friends and family exclaim "That's it?!" when I list the ingredients for them. It tastes so rich, complex, and decadent that it's hard to believe that it requires only 3 simple ingredients, all of which I typically have on hand and bet that you do too!
I've been on a real side-dish kick over here at Fresh Erica HQ, and with good reason: I'm a firm believer that every part of a meal should be delicious and find this especially important when it comes to veggie sides. At any given meal, I try to fill at least ½ of my plate with veggies, and there's no way you'd catch me eating a meal that was ½ boring! Yes, of course simplicity can yield delicious results, especially if you're working with fresh, seasonal produce, but I won't lie...I'm a complicated lady and I like complex and interesting food! This sweet potato purée hits the mark when it comes to taste, but as referenced above, is also extremely straightforward to whip up!
But my love for this sweet potato purée doesn't stop there! A quick list to persuade you that you need this in your life ASAP:

- It requires 3 simple ingredients. YES, 3! When's the last time you made something that was so delicious that you'd serve it to Meghan Markle (modern day Queen of England reference anyone?) but it required only 3 ingredients? Probably never...or at least a long time ago!
- It's super easy to multiply and serve to a large crowd! And believe me, you're gonna want to whip this out and impress your guests.
- This dish is a cinch, time-wise as well! It takes ~15 min, but if you're speedy, I bet you can cut it to 12, hehe.
- It makes 3 dishes for cleanup, and one of them is a cutting board. Cleanup is a total breeze. Yes please!

Simply Delicious Sweet Potato Purée
Ingredients
- 2 large sweet potatoes
- 2 tbsp ghee (I use Organic Valley)
- 2 tsp sea salt
Instructions
- Peel and chop potatoes into small pieces (about ½ inch thick).
- Place potatoes into a pot of boiling filtered water. Allow to boil until potatoes are soft when poked with a fork. About 10 min.
- Drain potatoes and transfer to a high powered blender. Add other ingredients and blend on high for ~2 minutes, scraping down the sides as needed.
- That's it! Serve and enjoy.
