No Juicer Green Juice

This no juicer green juice...I mean...I'm obsessed. I'm already a huge fan of straight-up fruit-free green juice, and have been for a while, but 1. I have a hard time stomaching the idea of paying $8 (or more!) for it from a local juice shop and 2. I don't have a juicer at home-- my apartment is TINY y'all. A juicer just didn't make the cut.

So what was a green juice lovin' gal to do? Answer: decide- screw the juicer! This recipe for no juicer green juice is the result of that decision, and I couldn't be happier with it. It has become a staple breakfast item for me because it is SO easy, and an amazing way to get greens in first thing in the AM, which I'm all about. Plus, since I'm using a blender instead of a juicer, I'm still getting all of the great fiber that comes along with noshing on the vegetables as-is, which is something that is lost in the standard juicing process. Ok, I'll stop gushing now- here's the recipe!

Juicer-Free Green Juice

Ingredients

  • 3 cups spinach
  • ½ cup parsley leaves
  • ⅓ cup cucumber (about ⅓ of a large cucumber)
  • 1 large celery stalk
  • Juice from half a lemon
  • 2 cups filtered water
  • 3-4 ice cubes

Instructions

  • Roughly dice or break your cucumber and celery into large chunks
  • Add all ingredients to the blender
  • Blend on high for 1-2 minutes or until a juice-like consistency is achieved
  • Pour and enjoy!

Notes

If you're not getting a juice-like consistency, first blend the juice for 1-2 more minutes. If you're still not achieving the consistency you'd prefer, add water in ¼ cup increments until you're rocking some juice!
